‘Veg nut’
Very quick under 20 min and very inexpensive. Im working really hard trying to Only put what is accessible, can be substituted and quick meals on this blog. Holidays are one of the many vacations of the year where Cooking becomes such a Drag. Instead of enjoying with family we run around like Chickens without a head trying to please people. This year, Simple is better for us and it can be elegant too.
For the Vegetarians I have a yummy quick dish.
Ingredients:
Veg of choice. I used 7 portabello mushrooms, half red capsicum, 2green chives, 1/3egg plant and 2stalk cilantro.
1tsp sesame peanut butter oil, 1tsp soy sauce, 1tsp vegetable butter , half a cup of water and 1 veg bullion.
Cooking:
- Slice all veg. Put pan on med (6). Let the pan heat for 4min add add 1/2 cup water. Note: if water sizzles or bubbles Instantly add Bullion.
- 1min after adding bullion Add sliced veg and lid. This will allow veg to steam. Steam until soft yet crunchy (do not let your veg get mushy it looses vitamins). Aprox 4 min.
- Add butter and lower heat to 3. Stir all veg into butter.
- Add 1tsp sesame peanut butter oil, 1tsp soy sauce (optional 1 slice ginger). Cook without lid for 2 min (make sure sesame peanut butter oil is well mixed with All veg).
- SERVE hot with white rice , garden salad Or tofu.
