Japanese Omelette-Med My rendition

This However is my rendition on this Japanese Omelette.

Ingredients:

  • 1 cup Par boiled rice
  • Half of a bullion (your choice)
  • Half a small onion sliced
  • 2 garlic cloves minced
  • 1 teaspoon oil
  • 1 table spoon oil  (your choice, can be made with previous oil from veg of that day sausage other. Sounds disgusting but restaurants do this)
  • 1and1/2cup water
  • 1 small pack sazon goya achote
  • 3eggs (size of your choice)
  • pinch Himalayan salt
  • 1 teaspoon butter
  • 1 tablespoon grated melting cheese.
  • 1 tablespoon sour cream
  • 2 large lettuce leafs
  • non stick pan
  • spatula & bowl
  • small rice cooker

All right :

Rice~put teaspoon oil in rice cooker along with half bullion, half of the amount of garlic minced and half of onion minced. Lid rice cooker. When bullion looks mushy add 1 cup parboiled rice, 1an1/2 cup water and 1 small pack sazon goya achote pack. Stir rice27661850_1530604577024171_601807768_n so that it may obtain sazon color & flavor and Lid.

Heat your pan to a med (5 on my stove) for 5 min.

Eggs~Add eggs(removed from shells) into bowl with pinch Himalayan salt, half the onion and half the garlic minced. Mix well.

Add Butter to pan and quickly add egg mixture to pan. let it cook on both sides like an omelette making sure both sides are cooked. Add 2 table spoons Cooked rice to one side of your flat egg while it is in the pan. Lower heat (2). Bring the egg that has no rice over and enclose the rice. Seal it with cheese by putting the cheese on edge.

Serve Omelette on top of two large lettuce leaves with the sour cream. Enjoy!

Vegetarian- Ovo-tarian. Easy

Modern Wife

I my self tend to eat more plant based. I’m what some refer to as a Lacto-Ovotarian. A person who will sometimes consume egg, milk but no meats. I however don’t enjoy having to explain the intricacies of my choices. So i just say “I’m more plant based”.

This recipe is simply Ovotarian.

  • 1 extra firm Organic soybean sunrise Tofu.
  • 1 bowl
  • spatula
  • 1 small egg.
  • 1 tablespoon Organic brown flour.
  • 1 teaspoon Montreal steak Spices (no beef).
  • 1 teaspoon chopped Onion (white).
  • 1 teaspoon chopped green capsicum.
  • 1 teaspoon oil.
  • Drain and dry tofu. Then Slice a third of the Tofu block.
  • Slice tofu into small slices so it looks like grated cheese.
  • In bowl add tofu, egg, Montreal spice, onion, capsicum and stir well.
  • Heat non stick pan to 5 medium for 10 min. Add oil.
  • Add mixture to pan. wait until medium brown on one side and flip to the other side.
  • This is a great way to substitute the Chicken patties I put up earlier today. Just make sure that when your making it for a Vegetarian You figure out what they can and can not eat (specifics).

Fajitas Veg- Easy

So simple so good.

  • 1 cup full of sliced capsicum.
  • 1 cup sliced (soft) tomato
  • 1 cup sliced Onion
  • pinch salt
  • pinch pepper
  • 2 tablespoons water
  • 1 teaspoon oil
  • 1 garlic (small head) diced Or pinch garlic powder
  • Heat pan on med (5) until hot aprox 10 min
  • Add oil, garlic, onion and fry until light brown on Onion. Immediately add water and capsicum. keep heat at med and lid for 3 min.
  • Add tomato slices, salt, pepper. Lid and steam until tomato soften to becoming almost sauce. For me it was aprox 5min.
  • Serve with beef tacos,  as a side veg or as your veg main dish option.

Smoothie for good energy and Healthy Eyes :

  1.  One carrot.
  2. Teaspoon ground ginger powder (or fresh ginger.
  3. Teaspoon organic honey.
  4. One slice water melon,
  5. One teaspoon Flax seed
  6. Optional 1 fresh squeezed Orange
  7. Optional 1 kale.
  8. 1 cup water and blend.
  9. Strain if desire but you will lose a lot of its vitamins.If you have a juices it is better.

Christmas Spice

Makes for 6 people

For westerners this is very hot spicy.

Christmas Spice :p

Sometimes for Christmas we don’t want to bring something bland or maybe its One of those themed parties. Well I’ve been away for a while because I have been trying to come up with yummy dishes for Christmas / New years potluck parties.

Indian mutton is a meat dish. Although beef is not used in India. Beef can be a substitute in Western countries. Typically goat is used as their mutton in India. It may take up to 6hours to make, even with a crock pot or slow cooker. However Walmart offers a mechanically tenderized Beef that has been rolled in spices. You can find it in the Beef section. The label will say “Ready for slow cooker, mechanically tendqerized Beef”.

Ingredients:

Beef the quickest to cook is the one I said above from Walmart. Mine was 0.879kg ($12).

  • 1 red onion sliced.
  • 2 tomatoes diced.
  • 1 mangal keehma masala package.
  • 5 cups Basmati rice.
  • 2 hot small green chillies.
  • 1Cup frozen mix veg.
  • 4tbspoon ghee.
  • 1/2 teaspoon tandoori masala.
  • A pinch chili powder.
  • 1/2 teaspoon fresh ginger and grind.
  • 2 fresh garlic cloves grounded.
  • 4cups water.
  • Cooking : slice your meat so that it will cook quicker. Chop whatever may feel harder on your meat.
  • Add 4cups of water to your pot and put on high.
  • Add your sliced meat and cover.
  • In a separate pan out your 4tbs ghee. Cook on med (6 on my stove ). Until melted and bubbles appear 1min.
  • Add onion and 2 (hot)small green chillies. Cook until onion is caramelized (light brown).
  • Add diced tomatoes, 1/2teaspoon of mangal paste to onions and cook for 1min.
  • Check your meat! if your meat’s water is boiling up then let it cook for 1more minute.
  • To your Meat Pot add the onion and tomatoes.
  • Add your ginger, garlic cloves, chili powder, pinch Kosar salt (optional), teaspoon tandoori masala and the rest of the Magal masala paste package. Stir once.
  • Lid and lower heat to medium (my stove 6). Cook for 10min.
  • Stir meat after your first 10min on med. Lid again.
  • Leave your meat for another 10min on med.
  • While you wait. Make your Rice.
  • In a rice cooker add teaspoon oil 1slice onion and lid, cook for 2min.
  • To rice cooker add rice and water to cover it. There should be an inch of just water above the rice.
  • Add the frozen veg to the rice. Lid and let it cook.
  • After your rice is cooked let it sit on warm for 10min.
  • Back to your meat. Lower the heat to 3 or low for another 10min.
  • At this point you can check your rice if it’s still hard add a tablespoon water and leave it on warm for 5min . Then disconnect it or put it on low for 5min.
  • After that remove the lid and cover with a napkin for 5min. And remove napkin then put lid back on.
  • Check your meat!!! At this point your meat should be very soft tender juicy and ready to eat. If it is not then Add 2tablespoons of white vinegar.
  • Lower your meat pot to 2 for another 10min and stir.
  • If still not soft enough stir and lower to 1 or min. Then let it sit for 5min.
  • SERVE with roti, naan, sliced boiled eggs, on rice (I choose rice).
  • Remember to Enjoy! It taste delicious!!

Bibimbap Veg

Veg Bibimbap. A fav dish of mine. I only really make it for special me days 😀 Its very quick and under 20minutes to make. Obviously I am Not a Korean chef but I think it tasted pretty amazing. Anyway as always lets get to how to make this. Enough for 1 person add double ingredients for 2 people.

Ingredients: 2 cups Rice ,2 mushrooms, 2 small carrots, half an avocado,1 teaspoon sushi rice vinegar.  a pinch of salt, 1 teaspoon sesame, 2 cilantro with stem, 4pea pods(peas inside), rice cooker and 1 tablespoon dark soy sauce.

  1. Take all your veg of choice and thinly slice them. Unfortunately my knife sucked and I could not slice them thin enough But you want to slice your veg to half the size of my Veg above in this picture.
  2. Cook your 2cups of rice in rice cooker with 1 teaspoon sushi rice vinegar. Add a pinch salt. Let rice cooker cook.
  3. Now that rice is cooked, place rice at bottom of bowl and layer veg ontop. Layer the veg so that each veg of its kind will sit closely to each other going around in the bowl. I began layering the heaviest veg which were the carrots then avocado, mushrooms, and lettuce so forth.
  4. Sprinkle 1 teaspoon sesame over top of veg and poor your 1 tablespoon dark soy sauce into a container.
  5. Enjoy! typically they are to be mixed together and usually served hot but this is a Quick meal. Trust me it will still taste amazing. *As an option you could purchase Red Korean paste at a Korean market. You can also add shredded sushi seaweed and bean sprouts.

ps. Oh yeah I didn’t find my sushi soy holder so I bought new cig plates and use them as my soy holder.

Veg Stir fry

Sometimes in all the constant move of life;food becomes anything that is just edible. This day was one of those days. Where stuffing my face with bread was all I thought I had time for. When I say the soy sauce everything changed. Cook time under 15 min 😀

Ingredients:

1 cup chopped celery, 1 cup orange chopped capsicum, 1 cup chopped mushrooms, 1 cup chopped onion, 1 cup chopped bok choy, 1 cup frozen peas. 1 cup of dark soy sauce. 1 table spoon peanut oil,1teaspoon sesame oil. Pan and rice cooker. 1cup water.

  1. put 4 cups of rice to cook in rice cooker with water, pinch salt and teaspoon oil.
  2. Chop all your veggies.
  3. put your pan on high for 1full minute.
  4. Add chopped veggies to pan and add half a cup of water. Lid it and steam your veggies.
  5. Once water has evaporated from veg, add the second half of the water and lid. steam again.
  6. Now that veg is cooked push your veg to side of pan leaving aprox 30cm of space on pan to add white rice.
  7. in another cup mix 1 cup of dark soy sauce. 1 table spoon peanut oil,1teaspoon sesame oil.
  8. Add soy sauce mix to rice and veg.
  9. Mix at least 2 cups and a half of rice to your veg. If needed make one more soy sauce mix.
  10. Stir and mix well. Allow rice, veg and sauce to blend. Let it fry without a lid on low heat.
  11. ENJOY!

Udon Soup Recipe

I was waiting for the bus after work and it is very cold in Canada. So I decided to make a soup. As a cold, tiered, cranky, person all I wanted was something quick but yummy.

Here it is the under 10 min Recipe which I called U done – Udon!

Ingredients:                                                                         [ this makes enough for 2 people]

1 tbsp Dark Soy sauce, 5 mint leaves, 1tbsp sesame oil, 1 vegetable cube (bullion), 1 full tsp sesame sauce, pinch ginger powder, 3 carrots , 1 cup peas, 2 slices (chopped) onion, 1 block tofu (drained), water , a pot.  1 package Japanese Udon noodle. Optional a pinch sriracha hot sauce & half 1 tsp rice vinegar.

  1. Boil a pot of water with 1 vegetable bullion (2min).
  2. Once your bullion is fully dissolved add 2 sliced mint leaves. Boil for 1 minute.
  3. Add 3 carrots , 1 cup peas, 2 slices (chopped) onion, 1 block tofu. Boil until soft but not mushy 3minutes.
  4. Add 1 package Japanese Udon noodle.
  5. Add 1 tbsp Dark Soy sauce, 3 mint leaves, 1tbsp sesame oil, 1 full tsp sesame sauce, pinch ginger powder and optional section if desire. QUICK boil 2 min and ENJOY!

*If you are a meat eater add your choice of thinly sliced beef which was already cooked, canned fish or other. This of course will increase in cook and prep time.
